Marry Me Salmon
Marry Me Chicken has had it's moment - it's time to discover Marry Me Salmon. This dish is so irresistibly delicious that it might just inspire a spontaneous proposal right there in your kitchen. Sounds dramatic, right? But trust us, this one-pan wonder is that good. It’s simple enough for a weeknight dinner but impressive enough to make anyone rethink their relationship status.
You will need:
Plain flour, for dusting
4 salmon fillets
2 tbsp olive oil
1 onion, finely chopped
3 garlic cloves, crushed
200ml double cream
150ml fish stock
100g sundried tomatoes, finely chopped
½ tsp chilli flakes
1 tsp mixed herbs
25g parmesan, finely grated
½ bunch fresh basil, shredded
Step-by-step:
1. Get a good sprinkle of plain flour on a dinner plate. Season the salmon on both sides and coat in the plain flour, shaking off any excess.
2. Heat 1 tbsp of the oil in a non-stick frying pan, and over a medium-high heat on the hob (remember to switch on your cooker hood!). Fry the salmon fillets for 3 minutes on each side until they're golden and crispy. Pop them onto a plate and set aside while you make the sauce.
3. Heat the remaining 1 tbsp oil. Gently fry the onion and garlic over medium heat for 5-7 minutes, until they’re nice and soft. Add the cream, fish stock, most of the sundried tomatoes (keep a few to serve), chilli flakes and mixed herbs.
4. Give it all a good stir, then add the salmon fillets back to the pan. Let everything simmer gently for 10-12 mins.
5. Stir in the Parmesan and top with the remaining sundried tomatoes and fresh basil to serve.
