Air Fryer Pulled Pork Burgers

Pulled Pork Burgers made in the Air Fryer
Tonight's dinner is all about maximum flavour with minimal effort. We're talking fall-off-the-fork pulled pork – all thanks to your favourite countertop appliance. And before you ask, yes, you can use tin foil in the air fryer. Who knew weekday meals could be this easy?
You will need:
Spice rub (mix these together):
- 2 tbsp brown sugar
- 2 tbsp paprika
- 2 tsp mixed herbs
- 1 tsp coarsely ground sea salt
- 1 tsp garlic granules
- 1 tsp chilli flakes
For the pulled pork:
- 900 g (2 lbs) pork shoulder, trimmed of fat
- 1 small can crushed pineapple
- A few sprays of cooking oil
- BBQ sauce (use your favourite store-bought kind)
Step-by-step:
- Cut the fat off the pork and chop the meat into smaller pieces.
- Line your worktop with foil and
place the pork pieces on it. Sprinkle with the spice rub, drizzle with the oil
and top with the crushed pineapple. Pour in the pineapple juice or a little
water. Tightly wrap the pork in the foil to make a parcel.
- Pop the wrapped pork in your air fryer and cook for 90 minutes at 180°C. You can check if it's done by sticking a meat thermometer in – it should be 185°C, or very tender when poked with a knife. If not cooked through, cook for another 15-20 minutes.
- Once cooked, open the foil carefully (it will be hot!) and let the meat rest for a few minutes. Then, using two forks, shred the pork apart in a bowl or right back in the air fryer.
- Pour your favourite BBQ sauce into the air fryer and heat it up for 15 minutes at 200°C, or until it's bubbly.
- Toss the shredded pork in the hot BBQ sauce until well coated. Enjoy your pulled pork on buns, in quesadillas, tacos, or even in a salad!
