Pumpkin Pasta Bake with Mascarpone and Blue Cheese

Air fried Pumpkin Pasta Bake

@the_greedy_ginger has created the perfect recipe to use up all those pumpkins, and a fun, easy meal idea to serve for Halloween. Personal size pumpkins fit perfectly in our 8L Dual Basket Air Fryer, making a very literal pumpkin pasta bake.

You will need:

  • 1kg Pumpkin
  • 3 Sage leaves
  • 2 Garlic Cloves
  • 75g Spaghetti
  • 50 ml Milk
  • 1 tbsp Mascarpone
  • 40g Blue Cheese
  • Salt and pepper

Step by step:

  1. Start off by preparing the pumpkin, taking the lid off and seeds out
  2. Add sage leaves, crushed garlic cloves, a drizzle of oil, Salt and pepper
  3. Rub a little oil around the outside of the pumpkin
  4. Put in the air fryer, lid off, and put on 200C for 20 minutes
  5. Meanwhile, put the pasta on to cook for ~ 7 mins, until just under al dente
  6. When the pumpkin is cooked, remove from the air fryer, removing the garlic and sage, and gently use a fork to begin pulling the pumpkin and mashing (add back to the air fryer if it needed a minute or two more to soften)
  7. Keep doing so until the centre is a nice soft mash, taking 2 tbsp out to be able to fit the other ingredients in
  8. Add the milk, mashing some more until a puree is beginning to form
  9. Add in the Mascarpone, half the blue cheese and seasoning, mixing in
  10. Add in the spaghetti, 1/3 at a time, mixing through until it is all mixed in
  11. Top with the remaining blue cheese, S&P and put back in the air fryer at 200C for 5 minutes, until crispy on top
  12. Serve at your Halloween dinner party for a fun and utterly delicious meal
