Pumpkin Pasta Bake with Mascarpone and Blue Cheese

Air fried Pumpkin Pasta Bake
@the_greedy_ginger has created the perfect recipe to use up all those pumpkins, and a fun, easy meal idea to serve for Halloween. Personal size pumpkins fit perfectly in our 8L Dual Basket Air Fryer, making a very literal pumpkin pasta bake.
You will need:
- 1kg Pumpkin
- 3 Sage leaves
- 2 Garlic Cloves
- 75g Spaghetti
- 50 ml Milk
- 1 tbsp Mascarpone
- 40g Blue Cheese
- Salt and pepper
Step by step:
- Start off by preparing the pumpkin, taking the lid off and seeds out
- Add sage leaves, crushed garlic cloves, a drizzle of oil, Salt and pepper
- Rub a little oil around the outside of the pumpkin
- Put in the air fryer, lid off, and put on 200C for 20 minutes
- Meanwhile, put the pasta on to cook for ~ 7 mins, until just under al dente
- When the pumpkin is cooked, remove from the air fryer, removing the garlic and sage, and gently use a fork to begin pulling the pumpkin and mashing (add back to the air fryer if it needed a minute or two more to soften)
- Keep doing so until the centre is a nice soft mash, taking 2 tbsp out to be able to fit the other ingredients in
- Add the milk, mashing some more until a puree is beginning to form
- Add in the Mascarpone, half the blue cheese and seasoning, mixing in
- Add in the spaghetti, 1/3 at a time, mixing through until it is all mixed in
- Top with the remaining blue cheese, S&P and put back in the air fryer at 200C for 5 minutes, until crispy on top
- Serve at your Halloween dinner party for a fun and utterly delicious meal
