Air fryer harissa chicken and Mediterranean vegetables
If you’re juggling kids, laundry, and what on earth is for dinner all at once, this Air Fryer Harissa Chicken recipe will quickly become a go-to.
This dish is a lifesaver for busy families, with tender chicken thighs marinated in a tangy harissa sauce and roasted Mediterranean veggies that practically cook themselves. Plus, it's a one-appliance solution for hungry bellies and minimal washing up.
You will need:
For the chicken
- Boneless, skinless chicken thighs
- Harissa
- Lemon juice
- Honey (optional)
- Garlic powder
- Salt
- Pepper
For the Mediterranean vegetables
- Courgette
- Cherry tomatoes
- Bell pepper
- Red onion
- Olive oil
- Dried oregano
- Smoked paprika
- Salt
- Pepper
Step-by-step:
Prepare the chicken
- In a bowl, combine lemon juice, harissa, garlic powder, salt, and a cheeky splash of honey (if you’re feeling sweet).
- Toss in the chicken thighs and give them a good mix until they're covered in flavour.
- Pop the bowl in the fridge and let it marinate for at least 30 minutes, or up to 2 hours.
Prepare the Mediterranean vegetables
- Dice bell pepper and red onion.
- Slice courgette into 1/2-inch thick slices.
- In a bowl, mix together the courgette, bell pepper, red onion, and some cherry tomatoes.
- Give it all a good toss with olive oil, oregano, smoked paprika, salt, and pepper.
Cook the chicken and vegetables
- Place the marinated chicken thighs in one air fryer basket and the Mediterranean vegetables in the other.
- Hit that SYNC function so both baskets cook at the same time. Set the chicken to 14-16 minutes at 200°C and the vegetables to 15 minutes at 95°C.
- Halfway through the cooking time, carefully open the air fryer and flip the chicken thighs.
- When the timer goes off, your delicious chicken and veggies are ready to be served. Bon appétit!
