Leftover Turkey & Leek Pies
Leftover turkey never tasted so good! Our dual basket air fryer makes it so easy to get a crispy, golden crust that will have everyone asking for seconds.
Serves 4
You Will Need:
1 knob of butter
1 leek, sliced
2 rashers of back bacon (or ham)
400g leftover turkey meat
1 tbsp plain flour
250ml chicken or turkey stock
Sea salt
Black pepper
2 tbsp crème fraiche
300g puff pastry
1 egg, beaten
Step By Step:
- Place a large saucepan onto a medium heat, add the butter then once hot add the sliced leeks and cook until softened.
- Add the bacon cook for 1-2 minutes before adding the turkey meat and plain flour. Stir to coat everything in the flour then pour in the stock and season well with salt and black pepper. Cook for 5 minutes until reduced slightly.
- Remove from the heat and stir through the crème fraiche.
- Spoon between four pie dishes.
- Roll out the puff pastry and cut 4 large pieces to cover each pie dish. Place over the pie dish and cut off any excess. Use a fork to crimp the sides down and cut an air hole in the centre. Cut out any extra decorations you wish out of the puff pastry.
- Brush the tops of each pie with egg wash. Place in the air fryer basket and cook at 180°c for 20 minutes until the tops are golden.
