Weeknight Dinners Made Easy: One-Pan Beef Tomato Pasta
Here's a recipe that'll make you look forward to cooking weeknight dinners. Just one skillet, a few ingredients, and Bob's your uncle – a hearty, flavour-packed meal that'll have you licking the plate clean. Creamy, tomatoey, beefy goodness that's as easy as a Sunday morning lie-in. Put on your stretchy trousers and get ready to dig in – dinner just got deliciously simple!
Serves 4
You will need:
1 1/2 tbsp olive oil
2 garlic cloves
1 onion
500g beef mince / ground beef
2 tsp Italian herbs
2 tbsp tomato paste
400g can chopped tomatoes
1 1/2 tsp cooking salt/kosher salt
1/2 tsp black pepper
1 litre chicken stock
350g fusilli, penne, macaroni or other short pasta
180 ml heavy cream
Step-by-step:
1. Heat olive oil in a large pot on a hob over high heat. Add garlic and onion, cook for 1 ½ minutes.
2. Add the ground beef and break it up with a spoon as it cooks. Season with Italian herbs and cook until browned. Stir in tomato paste and cook for 1 minute.
3. Add chopped tomatoes, chicken stock, salt and pepper. Stir in the pasta.
4. Bring to a simmer and cook for 15 minutes, stirring regularly.
5. Add heavy cream and simmer for 1-2 minutes.
6. Remove from heat, stir well, and serve. Top with parmesan cheese and parsley (optional).
