Easter Smarties Mini Egg Cookies
Calling all Easter bunnies! Spring has sprung and this Easter cookie recipe is about to become your new baking obsession. We're talking about the easiest Easter cookies recipe EVER, loaded with everyone's favourite Smarties mini eggs. This recipe just requires a few ingredients and little preparation time, making it ideal for bakers of all experience levels.
Makes 12
You will need:
180g unsalted butter, melted
150g granulated sugar
150g light soft brown sugar
1 egg and 1 egg yolk
45g (3 tbsp) golden syrup
300g plain flour
2 bags Smarties mini eggs
Step-by-step:
- Preheat your oven to 180C (160C fan / 350 F / Gas 4).
- Mix the melted butter, both sugars, the egg and egg yolk with a spoon until combined.
- Pour the mixture into a mixer bowl. Add the golden syrup, flour, and baking powder. Use medium speed on your mixer to combine everything. Then, fold in the Smartie mini eggs with a spoon. The mixture should be quite wet and sticky-looking so leave for 5 minutes to settle.
- Scoop the dough into 12 equal portions and roll them into balls.
- Place the balls of dough on trays lined with baking paper. Press a few extra mini eggs on top of each dough ball. Bake them in the preheated oven for 10-12 minutes, or until the edges turn golden brown.
- Let the cookies cool completely on the baking sheets as they will continue to cook a bit even after they come out of the oven.
